Born in 2002, the THEODORA CAKE owes its name to the Empress of Byzantium, wife of the great Justinian I, represented in the mosaics of the apse of the Basilica of San Vitale in Ravenna.
The recipe of this cake was invented by a group of local pastry chefs, who also created the Gruppo Pasticceri Artigiani di Ravenna Association, officially recognised by Confcommercio.
The Theodora cake is made mainly with typical local products: pine nuts, corn flour, butter, icing sugar, whole eggs, yolks, wheat flour and baking powder. But there are also chopped almonds, because of the relationship between Ravenna and the East.
